May is always a busy month for the Dayak community for one obvious reason – in preparation for the most anticipated Gawai Dayak (Hari Gawai). While the festival is officially celebrated on the 1st and 2nd of June every year, the preparation that goes into it can be enormous.

Food is a mainstay for any celebration

In celebration of the annual, biggest festival, traditional dishes cooked with love (air tangan) take centre stage. For those who ‘balik kampung’ to celebrate Gawai Dayak with their loved ones, food would be the main draw. This is simply because food is a universal language itself. It cuts across all ages and backgrounds. It brightens up the atmosphere and creates sweet memories.

Let’s shine our spotlight on Ayam Pansuh

Talking about Ayam Pansuh, the ‘air tangan’ of someone special beckons.

Affectionately known as ‘Manok Pansuh’ or ‘Syok Tanok Darum Bu-uruk’ in Iban and Bidayuh languages respectively, the main-course dish involves cooking chicken meat in a bamboo stalk filled with water and seasonings, and covered with tapioca leaves from the cassava plant, which can later be eaten together with the cooked chicken.

While Ayam Pansuh is today a popular dish among Sarawakians, for tourists, a trip to the Land of Hornbills (Bumi Kenyalang) would only be complete, having tasted this cuisine.
