KUCHING: Hilton Hotel Kuching is bringing the taste of Xi’an to its Ramadan buffet this year.
Hilton Kuching’s General Manager, Adrian The, said the buffet takes its cue from Xi’an street food, shaped by the influence of the Muslim community there, with many of the flavours brought from the city.
“We also learned that in Xi’an, there’s actually quite a heavy influence from the Muslim community,” he added.
He shared that the menu for Ramadan Buffet this year is led by executive chef, Alex Wong, with offerings from chefs Wang Fujian and Jiang Jin of Hilton Xi’an High-Tech Zone.
“The kitchen will still use local ingredients, with some recipe changes, to bring out the authentic flavours.”
He highlighted hand-pulled noodles, which he said will be made fresh and pulled daily, alongside an Australian tomahawk, plus fresh prawns and fresh salmon that are barbecued as the must tries.
“Guests can also expect Seafood on Ice, including Freshwater and Santubong Tiger Prawns, Japanese Half-Shell Scallops and New Zealand Green Mussels,” he said.



“The carving station will feature Salted Australian Stanbroke M5 Wagyu Brisket and Xi’an-style Roasted Lumina Lamb Leg with Basmati rice.”
Outside at the River View Café terrace, he said the live BBQ station will include Sematan Ornate Spiny Lobsters, Australian Black Angus Tomahawk, air-flown Norwegian salmon and Tiger King prawns.
“Familiar favourites will remain part of the line-up, including Musang King durian and lobster.”
Dessert, he said, is set up as a dedicated room with many offerings, including 13 ice cream flavours from Baskin and Robbins and Haagen-Dazs flown in from Switzerland.
“The dessert spread will also include handcrafted French pastries, local desserts and a live Kunafah station.”
Hilton Kuching said Inspirasi Xi’an, Diraikan Bersama at River View Café will run daily from 6pm to 9.30pm between Feb 20 and March 19, and diners will also get complimentary access to the hotel’s Kids’ Club.
The buffet is priced from RM588 nett per adult and RM294 nett per child aged six to 12.
