Four Bidayuh chefs to represent Malaysia at Foodex culinary competition

KUCHING: Four rising Bidayuh culinary talents from Puncak Borneo are set to represent Malaysia at the Masterchef of Foodex Culinary Competition in Ho Chi Minh City.

The team consists of Iana Akam and Nicky Nelson, who will compete in the Noodle Category, while Robbie Richard Balcarek and Janncy Nyohim are slated to showcase their expertise in the Rice Category.

In addition, Robbie Richard, Iana and Janncy will join forces in the National Team Category, where they are required to prepare a five-course menu within two hours.

The team will highlight Bidayuh culinary heritage by incorporating indigenous ingredients such as Borneo sour eggplant (terung Dayak), Bidayuh red rice, tepus (wild ginger), Sarawak giant freshwater prawn and umai, presenting traditional flavours with a modern interpretation.

Earlier, a send-off ceremony was held at the office of Puncak Borneo Member of Parliament Willie Mongin, who met the chefs to convey his support ahead of the competition.

“I am proud of all four of you for representing Malaysia and our Bidayuh community on the world stage.

“Your achievements have brought pride not only to Sarawak but to the nation,” he said, expressing confidence that their success would inspire more young talents.

Their participation underscores the growing recognition of Bidayuh cuisine as part of Malaysia’s diverse culinary identity, while promoting Sarawak’s indigenous ingredients and traditions to an international audience.
